How many ways are there to prepare the chicken? The chicken it is possibly one of the ingredients that gives us the most in the kitchen. Last weekend I decided to cook it stew; When you need to prepare it in advance this is a good choice, without a doubt!
Chicken admits of numerous combinations. This time it was a canned artichokes the ones chosen to accompany it but they could have been mushrooms to give just one example. I also decided to put tomato in order to take advantage of some very ripe tomatoes that I had at home. Do you dare to try this chicken stewed with artichokes?
- 1 chicken, chopped
- Salt and pepper
- 1 cebolla
- 1 cayenne chilli
- 1 glass of crushed tomato
- ½ glass of white wine
- 12 canned artichokes
- 1 hoja de laurel
- Water or chicken broth
- Olive oil
- Season the chicken and brown it in a casserole with a good jet of oil. We take out and reserve.
- In the same pot, sauté the onion for about 8 minutes.
- Then add the chilli and tomato and we mix so that the flavors are integrated.
- We also add the white wine and we let reduce a few minutes.
- Once the alcohol has evaporated, we return the chicken to the casserole and add the artichokes and the bay leaf.
- We pour broth of chicken until the ingredients are almost covered and cook approximately 30 minutes or until the chicken is tender.
- We serve the stewed chicken hot.
