Ingredients
  • 1 cebolla
  • 2 green peppers
  • 3 zucchini
  • 1 eggplant
  • Carrots 3
  • Homemade tomato sauce
  • 4 eggs (one per person)
  • Olive oil
  • Water
  • Sal Island

Preparation
  1. In a large pot we put a little olive oil and heat (at medium temperature). While the oil is heating we will cut all our vegetables in small cubes (washing it previously): carrots, onion, peppers, zucchini and eggplant.
  2. Add all the vegetables to the pot when the oil has heated up and let it fry for about 10-15 minutes approx.
  3. When the vegetables are almost done, we add the homemade tomato sauce (to taste). In my case, I added approximately 200 ml. We stir well and leave a couple of minutes until it warms up. Then we cast water (1 glass) let it boil. When it is boiling, add the 4 eggs and we will remove from the fire (at medium temperature) when they are poached.
  4. And to eat!
