I didn't know what to call this dish so I decided to give it the generic name as winter ratatouille. After all, pisto is still a fry of peppers, onion and tomatoes to which we can add others, such as, in this case, eggplant and pumpkin.
It is a dish with a good list of ingredients, but very simple to prepare. Of those dishes that you can serve as an accompaniment to meat and fish or main course. If you decide to serve it in this last way, try smashing a couple of eggs on top. Simple, tasty and healthy, what more can we ask for?
Winter pisto
This winter ratatouille composed of pepper, onion, tomato, aubergine and pumpkin is simple, healthy and delicious. You have to try it!

Ingredients
- 1 cebolla
- 1 green pepper
- 1 red pepper
- 1 eggplant
- 1 pumpkin wheel
- 1 ripe tomato
- Extra virgin olive oil
- 1 teaspoon of paprika (in my case a mixture of sweet and spicy)
- Freshly ground black pepper
Preparation
- We wash, peel and we chop all the vegetables so that the eggplant and the pumpkin are similar in size. We reserve each one separately.
- We crush the tomato and we reserve.
- In a low saucepan we heat 3 tablespoons of oil and sauté the onion until transparent.
- Meanwhile, we put water to heat in a saucepan and when it boils we add the pumpkin to cook 5 minutes. After time we drain and reserve.
- We add the peppers to the casserole and fry until soft. So, we add the eggplant and cook until tender.
- Then out of the fire we add the paprika and we take a few laps.
- After we add the tomato and we reduce the liquid for a few minutes.
- Finally we add the pumpkin and season. Cook for two minutes and serve.
