Chicken and zucchini noodles
Both salads and pasta are great alternatives when you want to make something quick. Both admit different combinations of ingredients as an accompaniment, being able to take advantage of those that are about to spoil in our pantry or refrigerator. This is how this dish of noodles with chicken and zucchini.

Some chicken breasts here, half a zucchini there ... the idea was to create a recipe that contained both ingredients. I could have combined them with rice, with some green sprouts or any other type of pasta, but I decided to use noodles. Do you dare to try it?

The noodles with zucchini and chicken are easy to prepare and are served accompanied by a very special seasoning based on olive oil, soy and tahini.

Ingredients
  • 2 chubby chicken breasts
  • ½ medium zucchini
  • 160 g. of noodles
  • 3 tablespoon olive oil
  • 2-3 tablespoons sesame paste (tahini)
  • 3 tablespoons soy sauce
  • 2 tablespoons red wine vinegar
  • 1 teaspoon of honey
  • ½ teaspoon cayenne
  • 1 garlic clove
  • 2 garlic cloves

Preparation
  1. We bring water to a boil in a casserole. When the water starts to boil, lightly add salt and add the chicken. We lower the heat, cover the casserole and cook 15 minutes until the chicken is cooked, but tender, approximately 12-15 minutes.
  2. We remove the chicken from the water, let it rest for a few minutes so that it hardens and we cut into strips or dice.
  3. While let's cook the noodles in plenty of water, following the manufacturer's instructions.
  4. In a skillet over medium-high heat we sauté the zucchini cut into strips until al dente.
  5. Meanwhile, in a medium bowl, we mix the oil olive, sesame paste, soy sauce, vinegar, honey, pepper and finely minced garlic. We test and rectify the flavor.
  6. We incorporate the noodles to the pan and mix with the chicken and zucchini. We water with the dressing, we give everything a couple of turns and we serve.
