The recipe is very simple and a very good alternative for parties in which we like to enjoy the company of our own. Why? You will ask. Because you can leave done in advance; Prepare it the night before or first thing in the morning and don't worry.
Ingredients
- 850 g. hake loins
- Salt and pepper
- Flour to coat
- 2 eggs for coating
- Extra virgin olive oil
For the leek sauce
- 1 large white onion, minced
- 4-5 leeks (the white part), chopped
- ½ glass of white wine
- Fish soup
Preparation
- We put a drizzle of oil in a low saucepan and poach the onion and the leek for 10 minutes.
- Then we add the white wine and cook a few minutes until it reduces and the alcohol has evaporated.
- Then, add 2 cups of broth of fish and let the whole cook for 10 minutes.
- Then we crush the mixture to achieve a very smooth sauce. If you like very thin sauces, also pass it through the Chinese.
- We batter the tenderloins of hake and fry them in a frying pan until golden brown.
- We incorporate them into the casserole with the sauce and we cook the whole 10 minutes for the hake to finish cooking and the flavors to integrate.
