Mussels in spicy tomato sauce
The mussels in tomante sauce spicy occupy a privileged place at my table. While cleaning fresh mussels is laborious, I will not deceive you, the result is well worth the effort on certain occasions. It is a dish with which it is very easy to surprise your guests.
Once clean, the elaboration of these mussels in the country is simple. Some products from the garden and a good tomato sauce are enough to present them on the table as you see them in the images. The spiciness level, I leave it to your choice. My theory is that it is better to fall short than pass.
Ingredients
- 1 k. clean mussels
- 1 cebolla
- 1/2 red pepper
- 1 garlic clove
- 1 ripe tomato
- 1/2 tablespoon of sweet paprika
- hot paprika (to taste)
- 1/2 glass of wine
- 1 spoonful of fried tomato
- 1 hoja de laurel
Crafting
In a large casserole we put cook the mussels in plenty of water and a pinch of salt. We are removing them as they open and once the cooking is finished, we strain the water to use it later.
In a low saucepan with a couple of tablespoons of olive oil, we prepare a sauce with the following ingredients: onion, red pepper and minced garlic. Once they are tender, add the peeled and diced tomato and add the paprika. We stir and cook for 3-4 minutes.
Add 1/2 a glass of the reserved water, the white wine, the tablespoon of fried tomato and a bay leaf. Bring to a boil over medium-high heat.
Meanwhile, we remove one of the mussel shells, placing the other in the casserole.
We cover the casserole and we let the mussels steam, turning off the heat.
We serve at the table, hot.
