I love to cook cupcakes and muffins. Maybe it's because of their simplicity or because I always find it fascinating to watch them grow in the oven. They also offer many possibilities in terms of flavors and possible combinations. These muffins with jam plum are fresh out of the oven.
Made with simple ingredients, these muffins have lemon scent and a heart of plum jam that makes them juicier. Of course, you can substitute the plum jam for another one that you like the most! You can also add orange juice and zest instead of lime… it's about trying and experimenting.
- 4 eggs
- 150 g. of sugar
- 1 tablespoon of lemon juice
- 1 tablespoon lemon zest
- 60 g. softened butter
- 1 natural yogurt
- 240 g. Of flour,
- 1 sachet of backing powder
- 200 ml. milk
- Plum jam
- We preheat the oven to 200ºC.
- We beat the eggs with the sugar with electric rods until they are fluffy.
- We add the lemon juice and the zest and mix at low speed until integrated.
- We add the butter and mix at gentle speed.
- Next, we add the natural yogurt and mix.
- We sift the flour together with the yeast and add the mixture to the dough, alternating it with the milk. Mix with enveloping movements, with a silicone spatula or wooden spoon.
- We introduce paper muffin molds into the metal molds.
- We pour the dough into the molds until filling three quarters of its capacity.
- Next, we put a teaspoon of jam in the center of each cupcake.
- We put in the oven and we bake 15 minutes about or until muffins are lightly browned.
