- 350 gr. raw pumpkin
- 250 gr. sugar
- 250 gr. Of flour
- 3 eggs
- 100 ml. sunflower oil
- 2 sachets of raising agents or 1 sachet of yeast
- 1 dessert spoon of cinnamon
Preparation
- To prepare the homemade pumpkin muffins, we will start by cutting the pumpkin. We will remove the skin, clean the seeds, cut it into small pieces. Take a microwave-safe bowl, add the pumpkin pieces, cover with plastic wrap and place it in the microwave for 6 minutes at 800W or until it is well cooked.
- In another bowl we will put the sugar and the pumpkin, we crush it. We will add the other ingredients, first the eggs one by one and beat, then the oil and cinnamon, mix well.
- We take the flour, add the yeast or the raising agent sachets. We will sift the flour and we will add it to the previous mixture little by little and mixing well.
- Once the dough is prepared, we will put some capsules for muffins in an oven mold, we will fill them with the dough ¾ parts, we will put a little sugar on top of each muffin. We will have the oven ready at 180ºC. We introduce the muffins and leave them for about 15 minutes, depending on the oven. To know if they are ready, click in the center of a cupcake, if it comes out dry, they will be ready.
