Green soy stew

Today we are going to prepare a green soy stew with vegetables, a very healthy and rich spoon dishIt is not very common to use it in our kitchens, but it is becoming known and used more and more.

To facilitate cooking since it is very hard and it would take time to cook, it is better to let it soak for 5-6 hours and thus in 40-60 minutes we will have them cooked. It should also be borne in mind that when it is cooked it must be removed from the heat before the skin opens. It will finish cooking outside with the same heat of the pot and the broth.

Ingredients
  • 400 gr. green soybean
  • 1 leek
  • ½ green pepper
  • 1 cebolla
  • 3 cloves of garlic
  • 1 hoja de laurel
  • 3-4 tablespoons of tomato sauce
  • ½ teaspoon ground cumin (optional)
  • ½ teaspoon sweet paprika

Preparation
  1. The first thing we will do is put the green soybeans to soak. We put the soybeans to soak between 5-6 hours, according to the manufacturer.
  2. In a saucepan we put 2-3 tablespoons of oil and put all the vegetables. I put them whole, you can put them chopped.
  3. We drain the soy and add it to the casserole along with the vegetables.
  4. Cover with cold water, put them over high heat, when they start to boil, lower the heat and let it simmer for 40 minutes or until you see that they are cooked.
  5. When there is little left, add salt, a little ground cumin, taste, it is better to put the salt last, remove the vegetables and put them in a glass, a little paprika and a little of the broth.
  6. We crush everything, with the mixer. We pour this into the pot, this gives a lot of flavor and thickens the broth.
  7. We taste, rectify the salt and when they are, we turn off. We let them finish cooking in the same pot.
  8. When they are served very hot.
