Ingredients
- 1 can of seasoned chickpeas *
- 1 grated carrot
- ½ chopped red onion
- 1 tablespoon coriander chopped
- 2 cups cooked chopped cauliflower
For the chickpeas
- ½ red onion
- 2 tablespoons chopped cilantro
- Juice of 1 lemon
- ½ teaspoon salt
- 2 teaspoons curry powder
- 1 can of cooked chickpeas
Preparation
- In a small blender we mix the red onion, coriander, lemon juice, salt and curry powder.
- We pour the previous mixture sover the cooked chickpeas drained and stir so that the flavors are integrated.
- We incorporate the carrot grated, chopped onion and coriander. We mix.
- We serve the chickpeas over cooked cauliflower.
