These vanilla and cinnamon spiral cookies that I invite you to prepare today are a good alternative to treat yourself to a sweet treat. Once the fear of making them is removed, the same base can also be used with different fillings.

Ingredients
  • 240 g. butter at room temperature
  • 240 g. icing sugar
  • 2 teaspoons of vanilla extract
  • 1 egg white at room temperature
  • 400 g. Of flour
  • 50 g. by Maizena
  • 1 teaspoon of salt
For the filling
  • 3-4 tablespoons of margarine at room temperature
  • 6 tablespoons caster sugar
  • 4 teaspoons ground cinnamon

Preparation
  1. We beat the butter and the sugar until obtaining a very creamy and whitish mixture.
  2. We add the vanilla and the egg white and beat a couple of minutes to integrate them.
  3. Then gradually incorporate the sifted flour with the cornstarch and salt and mix. We just knead it with your hands until it forms a smooth and smooth ball.
  4. We wrap the dough in plastic wrap and put in the fridge for a minimum of one hour.
  5. After the resting time, on a floured countertop, we roll out the dough with a rolling pin, forming a rectangle 0,5-0.8 cm thick.
  6. We spread the margarine over the dough and then sprinkle the sugar and cinnamon mixture.
  7. We roll the dough lengthwise and wrap in plastic wrap. We put in the fridge for a couple of hours so that it hardens and makes it easier to cut the cookies later.
  8. After those 2 hours, we preheat the oven to 200 ºC, cut 1 cm slices and we place them on the oven tray with the parchment paper.
  9. We bake at 180 ºC about 10 minutes or until cookies turn color.
  10. Then we let the spiral cookies cool on a wire rack.
