Christmas is approaching and with it family evenings and enjoying a good table with friends. These oatmeal cookies are perfect to accompany a good cup of coffee or chocolate for the little ones. They are simple to prepare, you can even ask your children to help you prepare them, since they are hardly complicated.

The recipe that I have prepared today is the most basic, but if you prefer, you can add some more ingredients to give it your special touch. Oatmeal cookies are easy on chocolate chips, pieces of nuts such as hazelnuts or almonds. Once you try them, you will surely repeat with these delicious oatmeal cookies. We get down to business!

Ingredients
  • 100 gr of pastry flour
  • 230 g of oat flakes
  • 150 gr of brown or cane sugar
  • 2 eggs L
  • ½ teaspoon baking powder
  • 150 ml of virgin olive oil
  • 1 tablespoon of vanilla essence
  • A pinch of salt

Preparation
  1. First we put the dry ingredients in a large container one by one.
  2. To start, we put the oats, then the flour and mix well.
  3. Next, we add the baking powder and the pinch of salt and mix again.
  4. Finally, we add the brown sugar and mix without stirring too much.
  5. Now, in a separate bowl, mix the eggs with the oil and the vanilla essence.
  6. Mix well and when we obtain a homogeneous dough, add to the container of dry ingredients.
  7. With a shovel, we incorporate all the ingredients well, it is not necessary to crush or beat.
  8. We preheat the oven to about 180 or 200 degrees, depending on the power of your oven.
  9. We prepare a sheet of baking paper on the oven tray.
  10. With the help of a spoon, we take small portions of dough and make a ball.
  11. We place it on the tray and carefully squash it a little to shape it.
  12. We put the tray in the oven for about 12 minutes, or until you see that the edges are golden.
  13. Once ready, we let the cookies cool on the oven rack.
  14. When they cool completely, they will finish hardening.
