There are days when you come home with no plans and you have to improvise. You start by checking out the fridge and then opening the pantry to get an idea of ​​what you can work with. And thus uncomplicated recipes arise like this quinoa salad, watermelon and zucchini.

It took what it takes to cook the quinoa, 10-12 minutes to prepare. During this time, I took the opportunity to prepare the rest of the ingredients. If, like me, you bet on zucchini, a quick sauté will be enough to incorporate it into the dish. Simple, right? Top it off with nuts and you will enjoy a plate of 10. Ingredients
  • 1 cup of quinoa
  • 3 cups of water
  • ½ zucchini, diced
  • Watermelon, diced
  • A handful of walnuts
  • A handful of raisins
  • 1 teaspoon of extra virgin olive oil
  • A pinch of salt
  • A pinch of black pepper

Preparation
  1. We wash the quinoa under running cold water for a few minutes.
  2. We put the water to boil and let's cook the quinoa for 10 minutes. Then we drain it and cool it.
  3. While the quinoa is cooking, in a pan with a teaspoon of olive oil we sauté the zucchini until it changes color and is tender.
  4. Then we incorporate the quinoa and we mix. We add a little salt and pepper as well as some species if we want it and we sauté one more minute.
  5. We place the mixture in a source and we add the watermelon, walnuts and raisins.
  6. We take a drizzle of extra virgin oil on top and we enjoyed our quinoa salad.
