When you have just enough time to cook, salads become a great resource. This of spinach, potato and nuts it is prepared in a couple of minutes if like me, you cook some potatoes during the weekend to have them prepared for these occasions.
The salad that we prepare today is a simple salad, to which you can add whatever you have in the fridge that is about to go bad; fruits, cooked rice, vegetables ... It is a wonderful base from which to create other more complete preparations. Do you dare to prepare it? Do not forget go through the plate the potatoes; it will look like another salad.
- 4 handfuls of fresh spinach
- 2 medium potatoes cooked
- Extra virgin olive oil
- 1 handful of walnuts
- 1 handful of raisins
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of balsamic vinegar
- ½ teaspoon of honey
- Salt and pepper to taste
- We wash the spinach, we drain and dry them before dividing them into two bowls.
- We peel the cooked potatoes and we cut into slices 0.5 cm thick,
- We heat a griddle or frying pan, spread it with a little extra virgin olive oil and mark the potatoes until they take on a little color.
- Add the potatoes, the walnuts and raisins.
- We mix all the dressing ingredients, we beat with a fork and sprinkle our salad with it before serving.
