If you fancy something fresh as a starter or accompaniment to your meat or fish dish, try this purple cabbage and apple salad. A light and healthy recipe that you can prepare easily and quickly, in just 5 minutes. Do you dare to try it?

On many occasions I substitute cabbage for lettuce in salads. I dream of grating it or, like today, cut it finely into julienne strips and combine it with fruits that give it a sweet touch. In this case, I chose some sweet apples and some raisins, but we can substitute these fruits for others depending on the time of year.

Ingredients
  • 2 cups red cabbage
  • 1 sweet apple
  • 1 Carrot
  • ¼ spring onion
  • 1 handful of raisins
  • ½ yogurt
  • 1 teaspoon of lemon juice
  • 1 tablespoon apple cider vinegar
  • Sal Island
  • Black pepper

Preparation
  1. Chop in fine julienne the purple cabbage and place it in a source.
  2. We incorporate the peeled and grated carrot and the apple cut into strips.
  3. We also add the julienned chives and the raisins.
  4. We mix in a bowl small the yogurt with the lemon juice and vinegar. Season the mixture and taste. We adjust the seasonings if necessary.
  5. We water the salad with the yogurt and mix before serving.
