Ingredients
- 500 gr. of potatoes
- 2 tablespoons of grated cheese of the one you like the most
- 3 tablespoons of butter
- 1 egg
- 2 cloves of garlic
- A handful of parsley
- Sal Island

- For the batter:
- 2 eggs
- Bread crumbs
- Frying oil
Preparation
- To prepare the potato croquettes with garlic and parsley, first we peel the potatoes, wash them and cut them into pieces.
- We will cook them in a pot with plenty of water and salt.
- Once the potatoes are cooked, we drain them well and pass them through a masher before they cool.
- Put the mashed potatoes in a bowl, add the butter, the grated cheese, the egg yolk, the finely chopped garlic and a little finely chopped parsley, mix everything well.
- We will put the puree to the point of salt and pepper. We let the dough cool.
- We prepare a plate with the beaten eggs, in another we will put the breadcrumbs.
- We make balls with the mashed potatoes, we leave them on a tray until we have all of them.
- We put a frying pan with plenty of oil over medium heat.
- We will pass the balls first by egg and then by breadcrumbs, we will fry them in the pan until they are golden brown.
- We take them out and put them on a serving tray.
