Battered artichoke hearts, a simple recipe. A dish that can be used as a starter, for an aperitif or snack, or as an accompaniment to a meat or fish dish.
Artichokes are a vegetable rich in fiber and healthy, with it you can make a great variety of dishes and enjoy the benefits of the artichoke. You have to take advantage of when they are in season, as it is when the artichokes and tender are best.

Ingredients
- 7-8 artichokes
- 300 gr. Of flour
- 1 egg
- ½ liter of very cold water
- Buy

- Sauce (Mayonnaise ...)
Preparation
- We will start by cleaning the artichokes, cut the tip of the artichokes and remove all the green leaves, leaving the center, the heart of the artichokes. If they have hair in the center we will help each other with a spoon and remove it.
- We put a bowl with water, lemon slices and part of the juice, as we clean the artichokes, cut them and put them in the water.
- On the other hand we prepare the batter. We sift the flour and add a little salt. In a bowl we beat an egg, add the very cold water, (we put it in the fridge for a while before).
- We will incorporate the flour and we will stir gently until it is well integrated. If there are some lumps left, nothing happens.
- We put a pan with enough oil over medium heat, we will spread the artichokes in the batter paste.
- We will fry them in small quantities, until they are golden all over.
- We will take them out and put them on a plate where we have put absorbent kitchen paper.
- We put them in a source and serve accompanied by some sauce or alone. As they are better they are freshly made and hot.
