I encourage you to start the weekend preparing this wonderful peach dessert.  The term cobbler is probably unfamiliar to you, but it shouldn't scare you. It is a preparation that has its origin in the United States and consists of a fresh fruit base and a baked sponge cake.

The cobbler They can be prepared with countless fruits: plums, cherries, blueberries ... and it is common to accompany them with a yogurt or ice cream. To make this cobbler we have chosen some ripe peaches and a yogurt ice cream, but you can create your own version. It is very simple to do, so it will not be the last you do.

Ingredients
  • 6 peaches, thinly sliced
  • 55 g. cup of brown sugar
  • The zest and juice of 2 lemons
  • 2 tablespoons cornstarch
  • ½ teaspoon ground cinnamon
  • 160 g. whole wheat flour
  • 60 g. of sugar
  • 1 teaspoon of chemical yeast
  • ¼ teaspoon salt
  • 76 g. cold butter in cubes
  • 120 ml. buttermilk (250ml of whole milk + juice of ½ lemon)
  • ½ cup of sliced ​​almonds
  • Ice cream to serve

Preparation
  1. We prepare the buttermilk. To do this, we put the milk in a bowl and then pour the lemon juice. We stir and let it rest for 10 minutes at room temperature until we achieve a mixture with the appearance of cut milk.
  2. We preheat the oven at 200ºC and grease a 22x22cm dish.
  3. In a large bowl we mix the peach, brown sugar, lemon zest and juice, cornstarch and cinnamon. We pour the mixture into the baking dish and reserve.
  4. In another bowl we mix the flour, sugar, baking powder and salt. Add the butter in cubes and we pinch with our fingers until pea-sized granules are formed.
  5. Then we incorporate the buttermilk and we beat -with the shovel if our mixer has this utensil- until forming a homogeneous dough.
  6. To finish, we put some tablespoons of dough over the peach mixture and sprinkle with almonds.
  7. Bake 45-55 minutes or until peaches are tender and crust is lightly golden.
  8. We serve with ice cream or yogurt.
