Squid in ink

Squid in its ink, a very good dish, easy to make. Squid in its ink is a traditional Basque recipe, we can find this dish in many bars, as a tapas or as a starter.

A dish that is prepared with its own ink and that has a lot of flavor. To accompany this dish, a cooked white rice goes very well.

Ingredients
  • 1 kilo of squid
  • 2 ink sachets
  • 1 cebolla
  • 100 gr. fried tomato (5-6 tablespoons)
  • 150 ml. white wine
  • Water glass 1
  • 1 tablespoon of cornmeal
  • Olive oil
  • Sal Island
  • Cooked white rice

Preparation
  1. To prepare the squid in its ink, we will start by cleaning the squid, this can be done in the fishmonger.
  2. Once clean we cut them into slices.
  3. We put a casserole with a good jet of oil, cut the onion and add it to the casserole, let it brown and add the fried tomato. When it is well poached, add the white wine, let it evaporate and add a glass of water. Let everything cook for 5 minutes.
  4. After this time we can crush the sauce so that it is finer, this will be to your liking, but this way the sauce is softer.
  5. Then we add to this casserole the ink of the squid or 2 envelopes of ink, stir well until it is dissolved and the sauce turns black.
  6. When the sauce begins to boil, add the squid cut into slices or pieces and a little salt, we will leave it for about 30 minutes cooking more or less, it will depend on the squid. After this time, if the sauce is very clear, we will dissolve a tablespoon of corn flour in a little water and add it and thus a more consistent sauce is left, if it is on the contrary that it is very thick add a little water.
  7. When the squid are ready, we taste the salt, rectify and they will be ready to eat !!! A delicious dish that can be prepared from one day to the next.
  8. It only remains to cook a little white rice to accompany this dish.
