Squid in onion sauce

Today I propose some squid in onion sauce, rich and simple to prepare.

Squid is a shellfish that we like a lot, we are used to eating it, grilled, in battered rings, to accompany other dishes such as rice, fideuá…. For this occasion I have prepared some squid in onion sauce, a wonderful, rich and simple dish, a plate full of flavor where bread cannot be missing.

A dish that we can prepare in advance from one day to the next and they will be much better, since the sauce is better.

Ingredients
  • 1,5 kilo of squid
  • 3 onions
  • 2 cloves of garlic
  • 200 ml. white wine
  • 1 dash of olive oil
  • Pepper
  • Sal Island

Preparation
  1. To prepare the squid in onion sauce, we will first start by cleaning the squid, this step can be done in the fishmonger, but you always have to finish cleaning them well.
  2. We remove the skin, remove the legs and tentacles, cut it into pieces.
  3. On the other hand, we cut the onions into julienne strips, peel the garlic and chop them.
  4. We put a casserole on the fire with a jet of oil, add the onion and let it poach over medium heat.
  5. When we see that the onion is poached, add the minced garlic.
  6. When everything is well poached we add the squid, we give a few laps, we sauté a few minutes all together.
  7. Add the white wine and let the alcohol reduce for about 5 minutes.
  8. We put a little salt and pepper.
  9. Add a small glass of water and cook for 10-15 minutes all together, until the squid are tender.
  10. We try to rectify salt and pepper.
  11. For the sauce we can take a little onion with the broth and crush it, add it to the squid, let it cook for a few minutes and the sauce is ready.
