Pumpkin balls

Ingredients:
300 g pumpkin
160 gr de harina
2 eggs
2 tablespoons grated Parmesan cheese
A pinch of nutmeg
1/2 package baking powder
Sal Island
Olive oil for frying

Preparation:
Clean and cut the pumpkin. Cook in water, blend into a paste and let cool.
In a bowl mix the pumpkin puree with 2 egg yolks, the Parmesan cheese, the sifted flour, nutmeg and half a bag of yeast. Mix well and, finally, add the 2 stiff egg whites with a pinch of salt.
Heat the oil, with a spoon take a little of the mixture and with the help of another spoon form a ball, place the ball in the pan. Fry a few balls at a time until they are golden brown. Drain on kitchen paper and serve.
