Sobao pasiego cake

Sobao pasiego cake, a delicious buttery-flavored sponge cake. A typical sponge cake from the Valles Pasiegos (Cantabría). It is ideal to accompany breakfast or a snack. As I always say, there is nothing better than a good homemade cake.

What makes this cake different is the butter flavor, it is juicy, smooth and a smell reminiscent of our grandmothers' biscuits. You can also prepare it in individual molds, like muffins. The two options are very good. You will love it !!!

Ingredients
  • 3 eggs
  • 250 gr. butter
  • 250 gr. sugar
  • 250 gr. pastry flour
  • 1 teaspoon of lemon zest or vanilla essence
  • 1 sachet of backing powder
  • Sugar glass

Preparation
  1. We turn on the oven at 180ºC.
  2. In a bowl we put the butter that we will have had at room temperature for a long time and the sugar, we beat it with some rods.
  3. Once it is well beaten and it is like a cream, we add the teaspoon of vanilla essence, mix, and we will add the eggs, one by one.
  4. We prepare the flour, sift it and mix it with the yeast envelope and we pour it over the dough, mixing little by little until it is all integrated.
  5. It should be a dense and well mixed cream.
  6. We prepare a mold for the sponge cake, spread it with butter and put greaseproof paper, it will be easier to unmold.
  7. We pour the dough into the mold.
  8. We put it in the oven at 180ºC for about 30 minutes, we will prick it in the center with a toothpick, if it comes out dry it will be ready, otherwise you leave it for a few more minutes.
  9. We take it out and let it cool. We can sprinkle icing sugar over the cake.
  10. And it will be ready !!!
