Nut sponge cake with strawberry filling and chocolate coating

Filled sponge cake

I love snacks accompanied by a good Homemade cake, especially now that the cold comes and you want to turn on the oven. The cake that I bring you today is one of those that you can make at any time, even when you are in a hurry, because it is very easy and always has a good result.

The best thing about this cake is that it admits many variations. I put walnuts in powder but you can substitute it for lemon zest, orange or grated coconut, for example. The filling and the topping are also optional because the cake by itself is already good, so if you are in a hurry because guests arrive or whatever, you can serve it as is and it will also be delicious. Come on, I'll stop talking ... Let's go with the recipe !.

Ingredients

  • 250 gr de harina
  • 250 g sugar
  • 3 eggs
  • 1 vanilla yogurt
  • 1 sachet of chemical yeast
  • 100 gr of sunflower oil
  • 1 teaspoon of powdered walnuts
  • A pinch of salt

For the filling

  • Strawberry jam

For coverage

  • 1 tablet of milk chocolate

Crafting

We are going to start by preheating the oven to 180ºC with heat up and down. In a bowl we are going to beat the eggs and sugar with a few rods for three minutes. Add the yogurt, the walnuts and the oil, beat again for a few seconds.

Then we will add the sifted flour, the yeast and the pinch of salt. We beat again, just enough so that the ingredients are well mixed. We already have the mixture made, now we only have to grease the mold and pour the dough, we will bake for approximately 40 minutes.

When it is ready we will leave it in the mold for 10 minutes and then we will let it cool on a rack. When it is cold we will open it in half and fill it with strawberry jam. We melt the chocolate in a bain-marie, place the cake on a rack and cover it with the chocolate. Finally, we will put it in the fridge for 15 minutes so that the chocolate becomes hard. If you are in a hurry you can put it in the freezer for 5 minutes.

Notes

  • I bake it by placing the pan on a rack, placed right in the center of the oven with heat up and down.
  • You will not have the oven until the end!
  • The best thing is that the ingredients are at room temperature. If the eggs and yogurt were in the fridge you can heat a little water and put them inside so they lose a little cold.
  • One tablespoon of oil is equivalent to 15 gr. approximately, so that the 100 gr. it would be just over 6 and a half tablespoons.
