We finished the week preparing a delicious sponge cake for breakfast. A breakfast that will make the return to the routine much easier tomorrow, thanks to a subtle hint of coffee and that nice toasted color that brown sugar gives it. Makes you want to try it right?
The homemade cakes They are a good breakfast for the whole family. Making them at home gives us the security of knowing what we eat, thus avoiding a sweet to sour us. You can, like me, sprinkle it with icing sugar, once cold, or leave it as it comes out of the oven to your liking!

Ingredients
- 114 g. of butter
- 105 g. brown sugar
- 100 g. white sugar
- 2 large eggs
- 170 g. pastry flour
- 1 tablespoon of ground coffee
- 1½ teaspoons baking powder (Royal)
- ½ teaspoon salt
- ½ teaspoon of vanilla essence
- 240 ml. milk
- Powdered sugar
Preparation
- We preheat the oven to 180ºC.
- We line the bottom and the walls of a round mold (20 cm) with baking paper.
- We beat the butter and sugar, until a creamy mixture is achieved.
- We add the eggs, one by one, beating after each addition until integrated.
- In a bowl, we mix the flour, coffee, yeast and salt.
- In a measuring container, we mix the milk with the vanilla essence.
- We add to the mix butter, sugar and eggs, alternately, milk and flour. We mix with enveloping movements after each addition, until we achieve a homogeneous mixture.
- We pour the mixture into the mold, tap and we take to the oven for 35 minutes, or until toothpick inserted, center comes out clean.
- We let the cake cool in the mold for 10 minutes and then unmold on a rack. We let it cool completely.
- In conclusion, sprinkle with icing sugar.
