Today some Stuffed Eggplant, a healthy plate of vegetables and meat. A simple dish to prepare and they are very good. The recipe that I propose is made with meat and vegetables and a bit of cheese to gratin them and voila, a light dish.
They are very tasty and a very complete dish that you can fill with whatever you like the most, you can also put the meat that you like, along with vegetables. If you are on a diet, this dish is ideal and very rich. Try it !!!

Ingredients
- 2 Eggplants
- 250 gr. minced meat (beef, chicken ...)
- 100 gr. fried tomato
- 50 gr. grated cheese
- Buy

Preparation
- First we prepare the aubergines. We turn on the oven at 200ºC.
- We will cut the aubergines in half lengthwise, we will make some cuts in the pulp so that they are made before, we sprinkle them with oil a little salt and pepper and put them on a baking sheet, we will leave them in the oven for about 40 minutes, until done. You can also make them in the microwave.
- When they are, we remove them from the oven, let them cool and empty the aubergines with a spoon, remove the pulp from the aubergines, chop them and reserve.
- While we are preparing the meat, in a frying pan we will add 2 tablespoons of oil and we will sauté the meat with a little salt and pepper, we will also put the pulp of the aubergines. We let it cook all together for about 5 minutes, so that all the ingredients are well integrated.
- We will place the aubergines in a baking dish, we will fill the aubergines with the meat mixture. We will cover them with the grated cheese.
- We will leave them in the oven until they are golden brown.
- And they will be ready to eat !!!
