I recommend you to make the peppers in advance for this recipe, so you only have to prepare the cod and accompany it with the peppers. These are kept for several days in the fridge in a glass tray covered with the juice and olive oil.

Ingredients

Preparation
  1. The first thing will be to desalt the cod.
  2. We will soak it for 36 hours, making 3-4 changes of water, depending on the thickness.
  3. Put the peppers in the oven, wash them and put them on a baking tray, spray them with a little oil and put them in the oven at 180ºC until they are roasted, take them out of the oven and let them cool covered with a cloth.
  4. Peel them and clean the seeds, make strips, put them on a tray, cover the peppers with their juice and a good splash of olive oil, peel a couple of garlic and cut it into thin slices and put it on the peppers. . We booked.
  5. Heat a pan with plenty of oil, pass the cod fillets in flour and fry them in very hot oil, brown them on both sides and put them in a casserole, when they are all covered, cover the cod with the peppers and their juice, we put it to heat everything together for 5 minutes so that the cod is fully cooked and the flavors mix well.
  6. And ready!!! A rich cod with peppers.
