Ingredients
  • 4 desalted cod fillets
  • A handful of almonds
  • 3 sliced ​​garlic cloves
  • 2 cayenne chillies
  • 1 small onion, minced
  • A few threads of saffron
  • 1 teaspoon of flour
  • ½ glass of white wine
  • 1 handful of raisins
  • Salt (in my case it was not necessary)
  • Olive oil

Preparation
  1. In a large skillet or pot we roast the almonds. Once done, we remove and reserve.
  2. In the same oil, now we brown the garlic with the chillies. Once done, remove and reserve together with the almonds.
  3. Now, adding a little more oil if necessary, Sauté the onion over low heat until transparent. Then, we add the saffron and cook the whole for a couple more minutes.
  4. Now, we add the flour and stirring we cook another couple of minutes.
  5. Then, we pour the white wine, the garlic, the almonds and the raisins. Cook for a few seconds so that part of the alcohol evaporates and then add the loins.
