Do you have 25 minutes? Then you can prepare this recipe. But you can also leave the sauce made a few hours before and all you have to do to finish it is heat it up and add the cod. This one only needs about six minutes to cook. And what are 6 minutes?
You do not have to worry, also, if the sauce does not have the first the desired texture. If it comes out very thick, just add a little water. And if it is too light? If that happens, you'll just need to lower it a bit more. Go ahead and prepare this cod!
The recipe
- 4 desalted cod fillets
- A handful of almonds
- 3 sliced garlic cloves
- 2 cayenne chillies
- 1 small onion, minced
- A few threads of saffron
- 1 teaspoon of flour
- ½ glass of white wine
- 1 handful of raisins
- Salt (in my case it was not necessary)
- Olive oil
- In a large skillet or pot we roast the almonds. Once done, we remove and reserve.
- In the same oil, now we brown the garlic with the chillies. Once done, remove and reserve together with the almonds.
- Now, adding a little more oil if necessary, Sauté the onion over low heat until transparent. Then, we add the saffron and cook the whole for a couple more minutes.
- Now, we add the flour and stirring we cook another couple of minutes.
- Then, we pour the white wine, the garlic, the almonds and the raisins. Cook for a few seconds so that part of the alcohol evaporates and then add the loins.
- We cover the casserole and cook the loins in the sauce about 5-7 min, depending on the thickness of the loin.
- Once they are done, we serve the cod in a sauce with almonds and raisins.
