The dourado cod is a tradition in Portugal. A different and original way of eating cod, cooked in a very special way. Ingredients
  • 500 gr of fresh cod
  • 4 medium potatoes
  • 4 eggs
  • Extra virgin olive oil
  • Parsley

Preparation
  1. First we must cut the straw-style potatoes, for this we can help ourselves with a kitchen mandolin, if we do not have a similar tool, you can get the cut by first making very thin slices and cutting transversely later.
  2. When we have the potatoes cut, we let them soak for a few minutes so that the starch is lost.
  3. We put a frying pan with plenty of oil on the fire, when it is hot we fry the potatoes.
  4. Go frying in batches, do not add many potatoes at the same time or they will not be crisp.
  5. When they are ready, reserve on absorbent kitchen paper to eliminate the excess oil.
  6. Now we have to shred the cod, as it is raw it is somewhat difficult to handle.
  7. First remove the skin and then little by little, separate the meat, being careful not to leave any thorns.
  8. Prepare a casserole with a low bottom and that is quite large, add a drizzle of extra virgin olive oil.
  9. When hot, add the cod and cook for about 2 minutes over medium heat.
  10. Add the potatoes to the casserole and mix well.
  11. In a separate bowl, beat the 4 eggs well.
  12. Add the beaten eggs to the casserole and stir well, cover a few minutes carefully so that the egg is not set.
  13. Add parsley to taste and voila!

Notes
This dish does not need to add salt, the cod is already tasty in itself, although if you wish, you can add a light touch of salt when beating the eggs.
