When I've had a regular day and I'm looking for a comforting dish, I often turn to rice. I don't know if you also have a favorite dish for such occasions ... Rice admits many combinations and it is easy to create a delicious dish starting from what we have on hand in the pantry.
This spiced rice with mango It came about like this, improvised. It is a simple rice, flavored with ginger, tamari, garlic and pepper among other ingredients. By itself it is already tasty, but it is even more so if we incorporate avocado or mango in this case. Two fruits that I don't know about you, but I love them.
- 2 tablespoons of rice vinegar
- 1 clove of minced garlic
- 1 teaspoon minced fresh ginger
- 1-2 cayenne, crushed
- ½ diced red bell pepper
- 3 cups of cooked rice
- 2 tablespoons tamari
- 1 cup of peas
- 1 mango diced
- ⅓ cup of roasted peanuts
- 2 chives, sliced for garnish
- We put on medium heat one nonstick skillet great.
- We add the rice vinegar and sauté the garlic, ginger and cayenne for a few seconds.
- We incorporate the pepper red and sauté for a few minutes until tender. If we see the pan very dry, we add a pinch of water.
- We add the cooked rice, mix and sauté until hot.
- Then, we add the peas, the mango and the peanuts and cook until the peas are done.
- We serve the rice in two bowls and garnish with chives.
