At home we like to prepare rice on the weekend. And we usually turn to classic accompaniments like chicken, rabbit or vegetables to complete it. In Cooking Recipes you have seen me publish recipes with all of them, but today I add a new proposal with this rice with rabbit and tomato.

Some time ago we were preparing rice with rabbit and livers, you remember? A rice very similar to the one I propose today but with important nuances. A version probably easier than that, not because it is easier to cook but because almost everyone likes it. Do you try it?

This rice with rabbit and tomato is an ideal weekend recipe. Easy to prepare and very tasty it is a great family meal.

Ingredients
  • Extra virgin olive oil
  • ½ chopped rabbit
  • 1 red onion, minced
  • 1 green bell pepper, minced
  • 1 red bell pepper, minced
  • 3 tablespoons of crushed natural tomato
  • 1 cup of rice
  • 3 cups hot vegetable broth
  • Sal Island
  • Pepper

Preparation
  1. In a saucepan with an oil base let's brown the rabbit, previously seasoned. Then we remove and reserve on a plate.
  2. In the same oil sauté the onion 8 minutes. Then, add the pepper and fry until all the vegetables are tender.
  3. Now, add the crushed tomato and we mix.
  4. We also incorporate rice and the reserved rabbit to the casserole and sauté a couple of minutes. After, we pour the boiling vegetable broth.
  5. We cook the rice over high heat for 6 minutes. Then we lower the heat and cook for another 10 minutes, keeping the boil. After those 10 minutes we turn off the heat and let the rice rest for 5 minutes.
  6. After resting, we serve the rice with rabbit and tomato.
