Ingredients
  • 3 eggs M
  • 125 g. of sugar
  • 225 g. Of olive oil
  • Zest of ½ lemon
  • 225 g. milk
  • 375g. wheat flour
  • 4 pairs of gasifying sachets
  • ½ teaspoon ground cinnamon a pinch
  • A pinch of salt

Preparation
  1. We beat the eggs with the sugar with some electric rods until they whiten and double their volume.
  2. Then, without stopping beating, we incorporate the oil in thread and then the lemon zest.
  3. Now, we pour the milk and mix until it is integrated.
  4. Finally, we add the sifted flour mixture, raising agent, cinnamon and salt and mix with a spatula with smooth and enveloping movements
  5. Once incorporated we carry the dough to the fridge to rest for an hour.
  6. Time passed, we preheat the oven to 220º C and we place 12 paper capsules in metallic molds for muffins or prepare silicone molds.
  7. Fill the molds up to ¾ full and we take to the oven for 16 minutes, lowering the temperature to 200ºC when the first 5 minutes have passed.
  8. We check if they are done and if they are we take it out of the oven and Let cool for 10 minutes.
  9. Finally, we unmold and let them cool completely to try these milk muffins with cinnamon.
