We start the week with a blunt dish and with an incredible mix of flavours: white beans with ham, artichokes and mushrooms. A proposal that you can serve as a single dish at lunch and that, with its presence, will enter everyone's eyes.

You can prepare this dish using the pressure cooker to cook the beans while you prepare the rest of the ingredients or use canned cooked beans. In this case, I opted for the first one because I was cooking for 4, but for one or two people the second option could be more practical.

Ingredients
  • 240g. dried white beans (+1 carrot and 1 bay leaf)
  • 1 chopped onion
  • 1 green bell pepper, minced
  • 250 g. mushrooms, chopped
  • ½ glass of crushed tomato
  • 75 g. of ham cubes
  • 1 teaspoon paprika sweet
  • Some canned artichokes
  • 1-2 cups of vegetable broth or the broth from cooking the beans
  • Sal Island
  • Pepper
  • Olive oil

Preparation
  1. Cook the white beans in a pressure cooker with a pinch of salt, a bay leaf and a small peeled carrot. About 20 minutes after the valve rises.
  2. Meanwhile, sauté the onion and pepper for 8 minutes in a casserole with a jet of oil.
  3. Then add the mushrooms, salt and pepper and fry for a couple more minutes until they take on color.
  4. When that happens, add the crushed tomato, ham and paprika and mix.
  5. Are the beans ready yet? We incorporate them together with the artichokes chopped and one or two cups of the cooking broth (in which we have crushed the carrot) and let it cook over low heat for 10 minutes.
  6. We corrected the point of salt if necessary and if everything is fine, we serve.
  7. We enjoyed the white beans with ham, artichokes and hot mushrooms.
