Ingredients
For the meatballs
  • 1 onion, finely chopped
  • 1 sprig of fresh rosemary
  • 1 tablespoon tomato sauce
  • 400 g. Of minced pork
  • 400 g. minced beef
  • 100 g. cured cheese
  • Olive oil
  • Sal Island
For the sauce
  • 1 chopped onion
  • 1 sprig of rosemary
  • 1 beef stock cube
  • 330 ml. of beer
  • 2 tablespoons of flour.
  • 2 teaspoons blueberry jam
  • 2 tablespoons balsamic vinegar
  • 600 ml. Water

Preparation
  1. Poach the onion seasoned in a frying pan with a drizzle of oil. When it is soft, add the tomato sauce and rosemary. Mix and cook two more minutes. We remove from heat to cool.
  2. Once the onion is cold, the we mix with the meat and we form small balls with our hands, introducing a cheese block in each one of them. We place them in a lightly greased baking dish.
  3. We prepare the sauce. To do this, fry the onion in a large frying pan with a drizzle of oil and a little rosemary.
  4. When it changes color, we incorporate the stock cube and beer and let it boil for a few minutes so that the alcohol evaporates.
  5. Then we incorporate the flour, jam and vinegar, stirring the sauce well after each addition.
  6. We finally add the water and we cook over low heat about 30 minutes or until sauce has thickened.
  7. We preheat the oven to 200ºC.
  8. We bake the meatballs during 15 minutes. After time, we water with the sauce and bake another 15 minutes.
  9. We serve hot.
