This zucchini cream is ideal if you want something light for dinner. You can take it both hot and cold. It is just as good!

Ingredients
  • 1 kg of zucchini
  • 8 cheeses
  • 500 ml chicken broth
  • 500 ml water

Preparation
  1. We wash the courgettes, we cut the trunk and put them in a pot to slices. When we have them all, we cover them with half a liter of chicken broth (if possible defatted) and half a liter of water. We add some salt and add the 8 cheeses.
  2. We boil everything together at maximum temperature and after about 15 minutes we set aside to beat.
  3. The cream must be perfectly whipped, no lumps. Taste it to see if it needs a little more salt. If you have gone overboard with it in the previous step, adding a little more water is enough.
  4. You can serve the cream hot or cold, As you like the most!
