Zucchini and garlic soup

Soups and creams are never stopped at home, but after a summer of cold versions, it is now autumn when we return to the hot versions. We have done it with this zucchini soup and tender garlic; a simple recipe that becomes a great alternative to start our meals.

Six simple and inexpensive ingredients they are all we need to prepare it. Also half an hour of our time, although this recipe will not require us to be aware of it at all times. After that time we can serve this light soup on the table that will not go unnoticed due to its intense color.

Ingredients
  • 2 tablespoons of extra virgin olive oil
  • 1 small onion, minced
  • 1 zucchini, diced
  • 1L of vegetable broth
  • 1 bunch garlic, minced
  • Salt and pepper
  • To decorate: pumpkin seeds, parsley and vegetable almond milk

Preparation
  1. We heat the olive oil in a saucepan and sauté the onion 4 minutes.
  2. Now, we add the zucchini, sauté for a couple of minutes and immediately afterwards add the broth. We cook 15-20 minutes.
  3. We add the tender garlic and cook 10 more minutes.
  4. To finish lightly grind until we achieve the texture that we like and season. We decorate with a little vegetable milk , parsley and pumpkin seeds.
