Zucchini and Eggplant Skewers

Vegetables Sometimes they cross us a bit when it comes to making them, we don't know how to do them for a bit of a change. But as a general rule we complicate things too much. That is why today I bring you some rich and simple zucchini and eggplant skewers.


As always we buy what is necessary, we calculate the time and we go to it.

Ingredients for 4 people:

  • 1 eggplant
  • 1 zucchini
  • egg
  • bread crumbs
  • oil and salt

We have already made the purchase, now we are going to prepare the recipe, as you can see they are easy to find and it is a peculiar way of presenting vegetables to the little ones.

Once we have the vegetable tacos, we salt them a little and we prick them on the skewer, I put a taco of each, regularly, but we can also make a skewer of each type of vegetable. Now we must take into account the size of the skewer to be able to fry them well, either in a fryer or in a pan.

We put the oil to heat. While we batter the vegetables, passing the egg and breadcrumbs. When the oil is ready, we put the skewers, a fair amount so they don't stick and get done right.

Once browned to taste, we take them out and we put them on kitchen paper so that it absorbs the excess oil.

We put a pinch of salt above and are ready to eat.
