Omelettes are a great resource when you come home tired with little desire to start making dinner. Just open the fridge and think about what ingredient or ingredients you can add to the omelette. In this case, the winning combination was formed by zucchini and Edam cheese.

- 2 eggs
- ½ diced zucchini
- 3 slices of Edam cheese
