Cooking is so easy in the summer ... At home between salads and sautéed we complete 80% of our meals. East zucchini and chicken stir fry with boiled egg is an excellent choice for both lunch and dinner and can be served warm or hot. Do you dare to prepare it?
Few ingredients will be needed to make it. The most important are the zucchini, which we find are in full season, and the chicken that you can substitute for other meat such as pork tenderloin or for vegetable proteins such as tofu or tempeh, among others.
In addition, we want to add onion and green pepper to the sauté and finish the dish with boiled egg. Everything, without dirtying more than one pan so that later cleaning the kitchen is much faster and easier. Do you like the idea of this stir fry?
The recipe
- Extra virgin olive oil
- 1 cebolla
- ½ red pepper
- 1 medium zucchini
- ½ chicken breast
- Sal Island
- Pepper
- 1 boiled egg
- Coarsely chop the onion and pepper and the sauté in a large frying pan with a drizzle of olive oil for 2 minutes.
- Then add the diced zucchini and sauté a couple of minutes more so that it browns slightly. After two minutes low the heat, over medium heat and cook the zucchini for 8 more minutes, covering the pan and stirring its contents from time to time.
- When the zucchini is tender, remove the vegetables to one side of the pan and add the chicken in cubes with salt and pepper. Sauté over high heat for a couple of minutes on each side to brown it and then continue cooking a few more minutes over medium heat, stirring it together with the rest of the ingredients until it is done.
- We serve the zucchini and chicken stir fry with boiled egg on top.
