Yogurt muffins with carrots, rich, juicy and easy to prepare. Ideal for a snack or breakfast. A simple recipe that is prepared with a yogurt and the glass of this is used as a measure.
This time I have prepared these yogurt muffins with carrots, in individual portions, but you can prepare a cake with these measurements for a round mold of 22-24 cm. It is just as good and juicy, it will only need more time in the oven.

Ingredients
- 1 natural yogurt
- 3 measures of pastry flour yogurt
- 2 measures of sugar yogurt
- 1 measure of sunflower oil yogurt or butter
- 200 gr. carrots
- 1 sachet of backing powder
- 4 eggs
- 1 teaspoon of cinnamon
Preparation
- To make the yogurt muffins with carrots, first we will wash the carrots and with a grater we will grate them to be fine.
- Apart in a bowl we will put the eggs with the sugar, we beat it well until the dough is fluffy, we add the oil, the yogurt little by little. We mix it well.
- We sift the flour together with the yeast and we add it to the previous bowl, we will add it two or three times, waiting for the flour to be well mixed.
- Finally we add the grated carrot and cinnamon, mix well.
- We turn on the oven at 180ºC.
- We take some molds for muffins, spread them with butter and flour so that they detach well or you can put capsules for muffins.
- We will fill the molds the ¾ parts with the dough, you can put a little sugar on top.
- We put the muffins in the oven, leave about 10 minutes or until they are ready. We will click in the center of the cupcake with a toothpick, if it comes out dry they will be ready.
- Several muffins come out.
- And they will be ready to eat !!!
