Ingredients:
1Kg of wild boar
½ Kg of chestnuts
4 onions
1 tablespoon vinegar
3 cloves of garlic
2 Bay leaves
Oregano
1 white wine cup
1 cup of red wine
Olive oil
Salt and black pepper
Preparation:
Put the chopped wild boar to marinate together with the 2 cups of wine, the tablespoon of vinegar, the bay leaves, the oregano, season. Leave to marinate for at least 12 hours in the fridge.
Hydrate the chestnuts in a bowl of water for 2 hours. Peel the chestnuts and put in the preheated oven for 10 to 15 minutes.
Remove pieces of wild boar from the marinade and pat dry.
In a saucepan, poach the onion with the garlic and oil. Introduce the pieces of wild boar, sealing the meat on all sides. Add salt and pepper, add the wine from the maceration and cook over low heat for 90 minutes.
Add the chestnuts and cook for another 30 minutes, stirring constantly.
