Ingredients
  • 1 kilo of potatoes
  • 1 cebolla
  • Saffron
  • 1 garlic clove
  • 1 tablespoon sweet paprika
  • 1 hoja de laurel
  • Pepper

Preparation
  1. To make the potato stew, first peel the onion, cut it into small pieces. Peel and chop the garlic.
  2. Put a splash of olive oil in a saucepan, add the onion, let it poach halfway through cooking, add the minced garlic.
  3. Peel and wash the potatoes, cut them into pieces by clicking them, so when they cook they release the starch and thus thicken the sauce, put them in the pan, fry them for a few minutes.
  4. Add the bay leaf, paprika and saffron, stir everything to mix everything well.
  5. Add the water to cover the potatoes, let it cook for about 15 minutes or until the potatoes are tender, it may vary depending on the potato. If you run out of water, add more water. You can also add vegetable broth or a bouillon cube.
  6. Halfway through cooking add a little salt and pepper or a little hot paprika if you like.
  7. When the potatoes are ready, try to see if you have to rectify the salt.
  8. If the broth is very thin, to bind it and make it a little thicker, crush a few potatoes and add them to the broth, move the pan to mix well.
  9. And they will be ready to serve !!!
