Today I bring you a simple, healthy recipe and it can also be useful, since you can put the vegetables that we have in the fridge, some wholemeal macaroni with zucchini.
Pasta is a very energetic dish, since pasta provides carbohydrates, but it also carries vitamins and gives us much more fiber than normal dishes, accompanied by vegetables, it is worth it as a single dish and it is a lighter dish. Ideal for a meal.

Ingredients
- 350 gr. whole grain macaroni
- 3 leeks
- 2 zucchini
- Tomato sauce or fried tomato
- Pepper

Preparation
- We will start by cooking the macaroni in plenty of water with a little salt, let cook until they are al dente or until they are cooked according to the manufacturer. We take out and drain. We booked.
- We prepare the vegetables. Wash the leeks, cut them in half and clean them in case they have dirt. We wash the courgettes, we peel them or we can leave the skin if you like. In my case, they don't like the skin very much, depending on the recipes, and I remove a little of the skin, leaving it in strips, so it doesn't show as much.
- Cut the leek into small pieces. Heat a frying pan with a little oil, add the leek, cook for 3 minutes over medium heat so that it does not burn.
- Cut the zucchini into small pieces and add it to the pan along with the leek. Let cook until everything is poached. We will add oil as we see what is needed. Add a little salt to the vegetables.
- When the vegetables are ready, add the tomato sauce or fried tomato. Let cook until everything is cooked well, add a little pepper and oregano, this to taste of each one and a little salt, try and rectify.
- In the same casserole or frying pan where the vegetables are, add the macaroni, mix and ready.
