At home we like to prepare a sweet recipe during the weekend. Especially cupcakes and muffins that we can enjoy breakfast and at the same time adapt and serve as a dessert, accompanying them with some glaze or topping. Cakes like this whole banana that we encourage you to try.

This cake is prepared with whole wheat flour and it does not have added sugar. It is a light and very healthy cake that becomes a great breakfast accompanied by a homemade fruit jam. Prepare it will not take you more than 20 minutes; then the oven will do the rest of the work.

Ingredients
  • 330 g. whole wheat flour
  • 1 ½ teaspoon baking powder
  • ¾ teaspoon baking soda
  • 1 teaspoon of cinnamon
  • ½ teaspoon salt
  • 14 g. butter at room temperature
  • 3 L egg whites at room temperature
  • 1 ½ tablespoons vanilla extract
  • 4 teaspoons of liquid stevia
  • 120 g. greek yogurt
  • 260 g. banana puree
  • 180 ml. skimmed milk.

Preparation
  1. We preheat the oven to 190ºC and grease a bread mold.
  2. We mix in a bowl the Dry ingredients: flour, yeast, baking soda, cinnamon and salt.
  3. In another bowl we mix the butter, the egg whites, the vanilla extract and the stevia. Add the Greek yogurt and the banana puree to the previous mixture and mix until there are no large lumps.
  4. Then alternately incorporate the flour and milk, beginning and ending with the flour mixture, and stirring until incorporated.
  5. We pour the dough into the mold and bake for 55-65 minutes or until toothpick inserted in center comes out clean.
  6. Once done, let it cool for 10 minutes before unmold on a wire rack to cool completely.
