For a few weeks and after filling the freezer full of pumpkin, preparing different dishes that integrate this ingredient has become a challenge in order to take advantage of the last pieces of the garden. and this of white rice with roasted pumpkin, It has been one of the easiest.
The pumpkin adds a sweet taste to dishes and its flavor intensifies when it is roasted, so the first thing you will have to do to prepare this recipe is to roast the pumpkin. You can do it on wheels, on dice... you decide! I made it in wheels, using half of them to prepare this rice and the other half to make a vegetable cream.
At home nothing is thrown away and since we were betting on a sweet touch to the rice we decided to also add a few pieces of fried plantain. Thus, this white rice with roasted pumpkin became a whole harvest recipe. And sometimes you don't have to think much, just combine what is about to go bad to prepare a good meal, don't you agree?
The recipe
- 3 wheels of roasted pumpkin
- 1 teaspoon of extra virgin olive oil
- 1 cup of rice
- A pinch of cumin
- A pinch of turmeric

- 2,5 cups of vegetable broth
- Put the pumpkin wheels in a baking dish, season with salt and pepper and we bake at 190ºC for 40 minutes or until tender.
- In a saucepan, heat the oil and We fry the rice.
- Add the spices and broth of hot vegetables. Let it boil over medium heat for 14 minutes or until the rice is done, stirring occasionally.
- Once it is done, we remove it from the heat and let it rest for a few minutes while we remove the skin from the pumpkin and We crush it with a fork.
- In conclusion, we mix the pumpkin with the rice and serve the white rice with hot roasted pumpkin.
