I don't know about you, but a very hot vegetable stew is very comforting in winter. So much so that every week I prepare one with either lentils, beans or chickpeas. East of white beans with prawns has been one of the last, do you want to try it?

The legume stews they are much easier to prepare than we usually think. This takes a bit more work because we have prepared the stock that accompanies it with the shrimp shells, but organizing it well will not take you more time than others. And the result is….

This legume stew is not only good but also has a great nutritional value. Prawns and white beans are added to its base made up of a modest vegetable sauce. You will only have to prepare a salad or include a dessert to complete your meal. I encourage you to try it.

Ingredients
  • 240 gr of white beans
  • 1 hoja de laurel
  • 2 cloves of garlic
  • extra virgin olive oil
  • 1 green bell pepper, minced
  • 2 small onions, chopped
  • 1 teaspoon paprika sweet
  • 1 tablespoon of flour
  • 2 glasses of crushed tomato
  • 350 g. prawns or prawns
For the stock
  • 1 tablespoon of extra virgin olive oil
  • 2 garlic cloves, sliced
  • Shrimp shells
  • Salt to taste
  • Fresh parsley to taste
  • 700 ml water

Preparation
  1. We start by preparing the stock. For it sauté the garlic cloves and the shrimp shells in a saucepan with a little olive oil. Once they take color, add the salt and parsley and cover with water.
  2. We raise the heat until the water begins to boil. Then we lower it and cook for 20 minutes, skimming if necessary. Once the broth is made, strain and reserve.
  3. At the same time, let's cook the beans in a pressure cooker with a bay leaf and two peeled garlic cloves. It will depend on the pot; in mine it was 15 minutes after the valve rose to the second position.
  4. Ahead we only have to prepare the sauce. We put 2 tablespoons of oil in a saucepan and sauté the onion and pepper for 10 minutes.
  5. Then add the teaspoon of paprika and the flour and stir for a couple of minutes so that the flour cooks.
  6. Next, we add the crushed tomato and after cooking the whole for 10 minutes, we crush it in the blender glass, returning it to the casserole.
  7. Then, we add the drained cooked beans, the prawns and part of the stock until we achieve the desired consistency. Cook 5 minutes and turn off.
  8. We serve the white beans with warm prawns.
