White bean, leek and prawn soup

Legume soups are a great resource during the coldest months of the year to warm up. Although I must confess that, as with stews, at home we do not stop taking them at any time of the year. This white bean, leek and prawn soup is an example of them.

Combining white beans and prawns It is one of my favorites. If we also incorporate a good base of vegetables with onion, pepper and especially leek as protagonists, success is served. A good Fish stock I would undoubtedly contribute to improving this soup, but I usually go for simplicity in my day-to-day life.

What I have done, in order to take advantage of all the flavor of the prawns is to fry their shells to achieve a base oil, flavored. Be careful if you have cats, because while you cook this dish they will not stop trying to jump on the counter. He who warns is not a traitor. Try this soup and tell me!

This white bean, leek and prawn soup is a true grana as a first course or dinner at a time of year when the nights are still cold.

Ingredients
  • 180 g. white kidney beans, cooked (dry weight)
  • 3 tablespoons olive oil
  • 20 prawns
  • 1 white onion
  • 4 leeks
  • 1 green pepper
  • ½ red pepper
  • 2 tablespoons of tomato sauce
  • ½ teaspoon sweet paprika
  • 1 fish stock cube (optional)
  • Water

Preparation
  1. We chop the onion, the peppers and leeks and peel the prawns, reserving shells on one side and meat on the other.
  2. We heat the oil in a saucepan and sauté the shrimp shells to flavor the oil for two minutes. Then we remove with a slotted spoon.
  3. In the same oil, now poach the onion, peppers and leeks finely chopped for 10 minutes.
  4. Then add the prawns and fry until they take color.
  5. Then we add the fried tomato , the sweet paprika and mix the whole.
  6. We incorporate the beans, the stock cube and the water (in my case the cooking water of the beans in a quick pot) and bring to a boil. Then we lower the heat and cook for five minutes.
  7. We serve the white bean, leek and prawn soup hot.
