Warm Cauliflower and Carrot Salad

How were the Christmas celebrations? Although you have not been able to celebrate them as you would have liked, I hope that you have enjoyed them. Now it is time, little by little, to return to normality; also at our table. And this warm cauliflower and carrot salad is an excellent option for it.

After copious lunches and dinners, some of us appreciate the back to simplicity from day to day. It will not take you more than 20 minutes to prepare this recipe and I am sure you will know how to enjoy it. You can add the spices that you like the most and dress it with a drizzle of extra virgin olive oil if you wish.

The salad has a base of fried onion and pepper which serves as a complement to the main ingredients, cauliflower and carrot. These are cooked first and then sautéed so that they take on a nice golden color. It is not mandatory but it seems to me that in that way all the flavors are better integrated. Do you dare to prepare it? If you add a cup of fried rice or tofu, you will achieve a very complete dish.

Ingredients
  • ½ large cauliflower
  • Carrots 5
  • 1 cebolla
  • 1 green pepper
  • Olive oil
  • Pepper
  • Sal Island
  • Hot paprika

Preparation
  1. We separate the florets cauliflower and peel the carrots.
  2. We put both things to cook in a pot with water and salt. After 10 minutes we remove the cauliflower and five minutes later or when the carrots are to your liking.
  3. Meanwhile, sauté the onion and the pepper chopped in a pan with two tablespoons of olive oil for 8 minutes.
  4. After 8 minutes add the cauliflower florets and the carrot in pieces, season and sauté the whole for five minutes.
  5. Afterwards, we remove from the fire, sprinkle with hot paprika to taste and mix.
  6. Sprinkle the warm cauliflower salad with a drizzle of extra virgin olive oil, if desired, and serve.
