Cook in tajine It is very simple and accepts almost any ingredient, generally they usually have meat or fish, but this time I bring you one that only has vegetables so it is very light and low in calories.

Ingredients:

  • 1 potato
  • 1 Zucchini
  • 1 red pepper
  • 1 Tomate
  • Sal Island
  • Black pepper
  • Half a teaspoon of cumin
  • White pepper
  • 1 garlic clove
  • Olive oil
  • Food coloring

Preparation:

We put the tajine over low heat together with a little olive oil. Lightly cook the sliced ​​garlic, just enough to be done but without turning brown. Once the oil has taken on flavor, we remove the garlic. Add water to the tajine and the spices (salt, black pepper, white pepper, cumin and coloring), mix well.

When it starts to boil we will add the potato, the zucchini, the red pepper and the tomato, all cut into slices except the pepper, which we will cut into strips and the zucchini I have put into slices, but it could have been sliced ​​as well. We can vary the way of cutting the vegetables, but I recommend that the order when placing them is the same since the potato takes longer to cook than the tomato, for example.

Once we have placed all the vegetables, we close the tajine and let it simmer. When all the vegetables are done to our liking, we remove from the heat and enjoy!
