Vegetable rolls with cheese

Ingredients (12 servings)
- 3 leeks
- Carrots 3
- 1/4 onion
- 1/2 zucchini
- 150 gr. of mushrooms
- 12 sheets of rice paper (rice feuilles or galettes de riz)
- olive oil
- 12 thin peaks of cheese
In a frying pan we put a splash of olive oil, the onion, the carrot and the leek. Everything well chopped so that there are no very large pieces. We leave it sautéing over medium heat for 15 minutes.
Add the mushrooms, chopped into small pieces, salt and pepper and sauté it over medium heat for another 15 minutes. We have to stay without brothIf it is too soupy, we put it over high heat for a few minutes until the liquid is consumed.
The filling is ready!
In a deep plate we put hot water and insert the rice paper sheets one by one to soften them.
Once it is soft we place it on a dry cloth so that absorb moisture, we add the filling and a piece of cheese. It is rolled up and placed on a baking tray greased with oil.
We spread the oil rolls on top (with the help of a brush) and put them in the oven at 180 degrees for 5-10 minutes to melt the cheese.
