Vegetable ratatouille with cod

Ingredients
- 1 Zucchini
- 1 eggplant
- ½ fresh onion
- 100 grams of cherry tomatoes
- 1 red pepper
- 1 green pepper
- 700 grams of cod
- Olive oil
- Sal Island
- White pepper
Preparation
- In a frying pan, we pour a jet of oil and turn the bits of cod already chopped that we have. We just want to do it a little bit because then they will be finished with the vegetables. We take out and set aside on a plate.
- In the same pan, with a little more oil, add all our vegetables well washed, peeled and chopped. We add a pinch of salt and we wait for everything to boil over medium heat: zucchini, aubergine, onion, tomatoes and peppers. The vegetables will release water, especially the eggplant and zucchini, so we will have to wait for this water to be consumed and evaporate. When it is almost poached and ready to add the cod pieces, we add a pinch of White pepper.
- Then add the cod, stir a little to mix all the flavors and leave over medium heat for 5 more minutes.
- After this time, we set aside and serve.
